The Guangzhou Airport supplies direct coaches to HK, it should be the most convenient way. It seems that there are a few of ferries could be used betwen Guangzhou and HK.
On the other hand, if you are in downtown Guangzhou, it is suggested that you take a bullet train to arrive in Shenzhen firstly. It is just about 70 minutes on the way. Just nearby the Shenzhen Railway Station, you could pass through the Luohu Port and then enter into HK easily.

There is only ferry from Sky Pier of Hong Kong airport to Dongguan. The ticket costs 290HKD, time: 10:30, 12:30, 14:00, 16:30, 18:15. 60 minutes for the journey. If you depart from the city center of Hong KOng, suggest you go to Hung Hom Station to take train to Dongguan (Changping).

I can only find the schedule from Haikou to Zhanjiang, Guangzhou, haian and Shenzhen. You can get to the New Port at Binhai Dadao to ask for the details.

Hi, you can take the ferry at 2:00 pm. I am not sure about the time for passing through the customs.
You can book the tickets when you arrive as the tickets are not quite tight. You can also buy it online to ensure that there is a ticket.

There is one ferry from Sky Pier of HK International Airport leaving at 10:30 and get to Zhongshan at 11:40. You can make it. The airport has free shuttle vehile carring you to the port, just in a few minutes.

So, you just would like to do traveling in HK or to shop at the same time. Anyway, you could spend one day to the Ocean Park, and then go to the Victoria Peak by tram to see the night view of HK. Actually, this city doesn't have too many top-class attractions. During the left time, you could visit Tsim Sha Tsui, Mangkok, Yau Ma Tei or Causeway bay to explore the local life and do shopping. On the other hand, you could plan a one-day's trip to Macau, too!

Current, there are four schedule ferries departing from China Hong Kong City Terminal, Hong Kong to Lianhuashan Terminal, Panyu (about 20 kilometers to Guangzhou City) everyday. The departing time is 07:50, 10:40, 13:50 and 18:10. The voyage is about 2 hours.
