2. Expedited Service Fee per Person
The regular processing time of a visa is 5 working days. For urgent cases, expedited service is available. Moreover, additional fees will be paid as following:

1 working day processing
(Applications should be submitted before 12:30.)

Notes:
1. The Consular Office doesn't accept applications by post or all kind of express delivery. The Mail Back Service is not available, either. Applicants can entrust someone else, such as friends, relatives, travel agencies, (needless of Trust Deed) to submit applications and pick up visas on their behalf.

2. 'L Visa' applicants should offer the Air Ticket and its copy if they apply for the Same-day Pick up Service.

3. Singe-Entry or Double-Entry L Visa is normally valid for 3 months and the Duration of Each Stay in China is up to 30 days. If the duration exceeds 30 days, please write clearly on visa applications.

I think the original and copy of Spain Residence permit are required, when the visa officer check the original one, it will return it to you and leave the copy.

You should apply for a China L Tourist visa with the following documents:
1.Applicant's passport with blank pages and at least 6 months validity left before expiration.
2. A truly and completely filled application form affixed with one passport-sized photo.
3. Round-trip air ticket
4. Invitation letter from your Chinese Friends.
5. Your Spanish residence permit and its copy.
You can go to the embassy in person, or you can entrust a friend or a travel agency to go to the embassy to apply for the visa on your behalf. A normal visa process procedure takes 5 working days.
The fee is EUR 25 for a single entry.

I am businessman applying for a visa to attend a trade show at Guangzhou in late November. I will have a letter of invitation. The event is 3 days and I then hope to stay in China to pursue business. I would like to apply for a multiple entry visa. The China embassy in Spain's application offers multiple entry options from 1 entry 3 months, 2 entries 6 months, multiple entries for 6, 12, or 24 months.
Can you advise what option I might successfully apply for and receive permission?
If I apply for multiple entries and they won't give permission for that will they automatically give permission for a lesser one without denying the visa application?

There are strict requirements for multi-entry visa applications, I advise you just apply for a double entry visa this time.
It's posible that the embassy may grant you a single entry visa if you can't meet the requirements of the multiple entry visa, but all depends on the China embassy and relevant China visa policies.

This pdf has one entry about multi-entry visas; you need an invitation from an authorized company in China or testimony that demonstrates close commercial relationships with businesses in China.
The other requirements are the standard boilerplate for any visa.
