In fact, H1N1 flu is not that serious in China. Some of my friends have been to China either for vocation or for business recently. They mentioned that Chinese people's life are in good order and not much influenced by the flu. They also met many other foreigners in China.
As for the hotel, if you would like to stay in one room, you'd better to book a two bedroom suite which have the enough space for your family. To wear shorts is Ok if you visit parks or entertainment places, but when you visit mosques, temples or monasteries, you should not wear shorts or slippers, you'd better wear some formal dress to show your respect to their religion.
