You can book a hotel in Kowloon and from Kowloon the whole of Hong Kong is easily accessible. Maybe Regal Oriental Hotel, Hong Kong is a good choice.

Good:
Hotel location is good. The Harbor City Shopping Mall, Tsim Sha Tsui metro station and the Star Ferry are all 5 minutes walk distance.
Service is kind and considerate.
Facilities are considerate. The window of the bathroom faces the room and then you can watch the TV when having a bath.
Food is highly recommended. The buffet breakfast is rich and the taste is excellent. There are many fruit juice, fruits, yogurt, porridge, bread, desserts and so on. Lunch and supper are delicious too, including seafood, local cuisine and Indian cuisine. This should never be missed if you are staying at the hotel.
Not good:
The lobby is small and the light inside is dim. Guestroom is not spacious.
TCG booking center: professional, efficient and trustworthy.
