Can you help me plan a visit to Guangzhou & Beijing ? I'd like to stay in Guangzhou for 7 days
The trip is next month.

Apologies I am staying for 10 days in total, planning to stay 7 days in Guangzhou and 3 days in Beijing next month

You really have a relatively long term travel.
7 days in Guangzhou seems too much: my suggestion is that four days can be spent in Guangzhou, where you can go to Sun Yat-sen Memorial Hall, Yuexiu Park, White Cloud Mountain (Baiyun Shan) and visit Pearl River. Local chimelong resort and clothing wholesale markets also deserve your time. For shopping, u can also roam around at Shangxia Jiulu and Beijing Road.

For the rest three days, you may consider to spend in Shenzhen (Winodw of the World, Splendid China and Folk Cultural Village and OCT East) or HK (Disneylnd, the peak and Ocean Park).

For your Beijing trip, Forbidden City & Tiananmen Square, Temple of Heaven, Great Wall, Watwr Cube and Bird Nest and Hutongs are all worthy. If you are interested in, the ski resort in suburb can be tried!

I have just booked a last minute trip to Hong Kong and would like to visit Shenzhen. Can anyone advise if South African passport holders can obtain Shenzhen visas at the border? Unfortunately, I do not have sufficient time to apply for a China visa before my departure.

Yes, you can have visa at the border, and you can apply for it right in Hong Kong too.
