There are good and bad points to visiting China in the winter. If you are pretty far south the weather is usually still fairly mild, but further north it can be very very COLD. Pack a couple of warm outfits (although you can also buy them cheap everywhere you go) and be prepared for tours spent shivering miserably. ^_^. I found the worst thing about going in winter was maybe that things didn't look so nice, because most cities we visited were very white and foggy - everything in the distance (and sometimes up close) was shrouded in mist and the sky was white. Everything looks kind of dull and drab under the winter sky, and even when it's sunny, you can't always tell. ^_^. The advantage is that winter is, understandably, "not" peak tourist season in China. This means you can easily get discounts in hotel prices and tours. You may find that tour groups are smaller (which could be a bad thing, because if it's too small it may not be cost-productive to, like, run it) and tourist spots are not so crowded. You may also find there are not many other foreigners around.

As I know, there are several Kongfu (Martial arts) performances in Shaolin Temple, even at interval of 30 minutes in the high season, which was told by our guide in Luoyang. The performance lasts about 40 minutes. If you did not catch up with the performance, you can go the the martial arts school near the Shaolin Temple, where many students do martial exercise on the playgroud. It is free for visit. But also, it depends on your luck to catch up with their class time.

But I do agree with Jeffrey that it is not worth to visit the White Horse Temple. Shaolin Temple and the Longmen Caves are really the highlights of Luoyang, even the whole Henan province.

I have been to Luoyang by myself. And the White Horse Temple and the Shaolin Temple are very alike. The former one is the oldest temple in China, but rather small. The Shaolin Temple is much bigger, and the Kongfu performance there was perfect! But the time is fixed. If like, could skip the White Horse Temple and spend more time in Shaolin.
