Do we need to obtain our own Visas?- one from the United States and the other from Taiwan? We would like to stay in 2 separate beds in the same room, so would that be 1 double room?

For details, we suggest your further consults his local authority ofice. If you are an American, you need to apply for a visa to enter China through your local Chinese Embassy.
There are only one big bed in the double room, what you want should be a twin room, in which two separate beds are available.
pleaes advise, does the tour include, flight+hotel and food??

A suggestion is for travelers returning to airport after the final day - provide bus transportation only to airport. I was cheated by the taxi driver and this left me really bad feelings...but it didn't spoil my wonderful trip.
