My son and I took the train from Beijing to Lhasa in late May. This was my second train trip in China (the first was five years ago) and I didn't see an enormous difference.
A few things you should be very aware of: If you book "soft sleeper", the fanciest available, you will be in a compartment for four - two upper and two lower bunks. So you will essentially be sleeping with two strangers if it is you and your husband. This didn't bother me a huge amount, but you have to approach it with something of a sense of adventure.
The food on the train is pretty bad (and I can eat almost anything.) HOWEVER, the sights on the second day are amazing and will take you through a very high plateau. It also allows you to adjust to the altitude gradually.
Getting the tickets and the permits to visit Tibet was something of a nightmare. My son lives in Beijing, speaks fluent Chinese, has a travel agent that he uses a lot, and we still didn't get the tickets until the afternoon that we left. But I would advise being persistent - it's worth it!
Before leaving US, let your doctor write you a prescription for the medicine SIAMOM which couldn't be found in China. Take it as prescribed 2 days before you take the train to tibet and continue to take it all the time on the train and during the tibet trip. The first day on the train is good but the second day in the mountains will be spectacular and you are going to take incredible pictures. Don't worry about getting sick on the train and best of all you will love the journey and of course tibet.
