Green Vegetable with Black Mushroom

Chinese name: 香菇青菜 (xiāng gū qīng cài)

Characteristic: Green vegetable with black mushroom is not only fresh in color, but it also tastes very good. Well tailored to suit most tastes, it can be cooked all year round using simple cooking methods.

One of the home-style dishes of Fujian cuisine, green vegetable with black mushroom seems light, but it is a very nutritious vegetable dish. Black mushroom is rich in protein, fat, carbohydrate and contains lots of amino acid, while green vegetable is high in minerals and vitamins.

Green Vegetable with Black Mushroom

Ingredients:
bok choy (rape, heart of cabbage or other green vegetables), 3 ounces
dried black mushroom, 1 ounce (fresh  mushroom, 2 ounce)
2 tablespoons cooking oil
1 teaspoon salt
1/2 teaspoon chicken bouillon (monosodium glutamate)
1/2 teaspoon sauce

Preparation:
1. Clean the green vegetables and quarter the ribs with a kitchen knife on the chopping board.
2. 2. Clean the fresh black mushrooms. Hull them and put them onto a plate (if using dried mushrooms, first soak them in warm water for about 1 hour).

Steps to Cook Green Vegetable with Black Mushroom

  Step 1: Place a wok over high heat until hot. Add 1 tablespoon of oil. Add the prepared green vegetables. Add 1 teaspoon of salt and half a teaspoon of chicken bouillon and stir-fry for 5 seconds. Add half a tablespoon of boiling water. Braise for about 10 seconds over high heat. Turn off the heat. Remove from the wok and place on a plate.

  Step 2: Clean the wok and place it over high heat. Add 1 tablespoon of oil. Pour in the black mushrooms when the oil is hot. Add half a teaspoon of sauce. Stir-fry for about 20 seconds on high heat. Turn off the heat.

  Step 3: Place the cooked black mushrooms on the green vegetables. Pour the juice from the wok onto the dish. Enjoy a plateful of Fujian delicacy.
