Stewed Winter Melon (Wax Gourd)

Stewed Winter Melon Chinese name: 红烧冬瓜 (hóng shāo dōng guā)
Characteristics: Stewed Winter Melon (Wax Gourd) tastes salty and fresh.

Just as the name implies, winter melon, a very healthy vegetable, is the main ingredient in this recipe. It contains multiple vitamins and trace elements necessary for the human body.

Being cold in nature, it is very helpful for supplementing the body fluid and clearing the stomach fire. It also can encourage the starch and sugar in human body to change into heat energy instead of fat.

Ingredients:


fresh winter melon, 500g
 

Preparation:


Clean the winter melon after being peeled. Cut into thick pieces (if too thin, it will be burnt to a frazzle easily) and put into a plate.

chopped ginger
chopped green onion
garlic slices
salt
wet cornstarch
soy sauce
Note: the amount of the seasonings listed above can be appropriately used according to one's personal taste.

Methods:

Put the wok on high heat and add in 3/4 wok of water. Add in winter melon pieces when the water is boiling. Boil it for 1 minute until it turns soft. Remove it from the wok and put into a basin.

Find a small basin or dish. Add in some salt, soy sauce, chopped green onion and ginger, garlic slices as well as the wet cornstarch. Stir it well with the teaspoon for later use.

Pour away the water in the wok, and place the wok over high heat until hot. Add some cooking oil, swirling to coat sides. Add in the prepared seasoning juice from the above step and stir-fry for 20 seconds until fragrant. Pour in the boiled winter melon pieces and stir-fry for 1 minute until the flavor is absorbed.

Turn off the heat. Ladle the delicious Stewed Winter Melon out of the wok and serve it into a fine porcelain plate.

    On Oct. 12, 2012, Mr. Leonard from UK & Ms. Lorraine from Australia enjoyed a home cooking a la carte lunch at a local family in Xi'an under the careful management by our company. They had a treasured opportunity to have a close contact with the locals and had a cooking class with the host by learning to cook Stewed Winter Melon, Shredded Pork with Sweet Bean Sauce & Chow Mein.
