Anhui
Cuisine is one of the famous Eight Cuisines of China; however
there are few Anhui cuisine restaurants in Shanghai. The locals
are generally unaccustomed to authentic Anhui Cuisine.
Differing from other cuisines, Anhui Cuisine places importance
on its ingredients rather than its seasonings. Signature Anhui
dishes are made of bamboo shoots, chicken and other local products
of Anhui. Most Anhui dishes are greasy and salty.
