Generally, soft sleeper compartment provides larger beds and wider moving space and it has locked doors. To learn more details, you can read on the following page: https://www.travelchinaguide.com/china-trains/hard-soft-sleeper.htm

baggage regulation
We are now planing a rountrip through china and want to use fast train connections, for example from Beijing to Xi'an. Is it possible to carry 2 luggages per person (handluggage <10 kg and a luggage of 20 kg) - as usually allowed by travelling via aircrafts - with us in the same train? Is it also possible to carry a stroller for our 3 year old son with us?

The embassy in Beijing is at No. 3 Dongsan Street, Sanlitun, Chaoyang District. You can take subway line 10 from Nong Ye Zhan Lang Guan which is in walking distance from the embassy. Getting off at Shuang Jing, than change to Line 7. You will get to West Station directly after 11 stops.

Is Xi'an North the final stop of trains from Beijing?
If not, how many stops between them? Will there be a reminder in English?

It depends on the train, for some of them, it is the final stop but others go further to other places. Stopovers also different for each of them. You do not need to worry about getting off at correct station, there will be information shows in the carriage, in English. You will not miss it.
