Stir-fried Eggplant and Green Beans

Chinese name: 豆角烧茄子 (dòu jiǎo shāo qié zi)

Ingredients:


eggplant, 300g
green beans, 150-200g

Tip: Long beans can be used to replace the green beans.

Preparation:


1. Clean the eggplant and cut into 5cm strips.
2. Tear the tendons of the green beans and clean them. Cut into 5cm sections.
3. Slice the garlic and cut the dried chili peppers into small sections.

Preheat a wok. Pour in enough cooking oil and heat to 355F (180C). Fry the green beans for 3-5min until blistery and withered. Pick out and drain off the oil. Add in the eggplant strips and fry for about 3min until golden. Also pick out and drain off the oil.

Leave some cooking oil in the wok. When the oil starts to smoke, add the garlic slices and dried chili peppers. Stir-fry until aromatic. Pour in the fried eggplant and green beans. Thoroughly combine them.

Add in some light soy sauce, white sugar and salt. Stir to mix with all ingredients.
