Black Fungus with Mashed Garlic

Black Fungus with Mashed GarlicChinese name: 凉拌木耳 (liáng bàn mù ěr)
Characteristics: Black Fungus with Mashed Garlic is a delicious and attractive dish.

This is a good appetizer to prepare in summer. Black Fungus with Mashed Garlic is simple to cook with the following recipe, but is highly nutritious. Many important vitamins and minerals are found in black fungus, including pectin, vitamins, inorganic salts, amino acids, phosphorous and acid amylase. In addition to the garlic, it is really a healthy dish.
 

Ingredients:


1 fresh red chili
1 fresh yellow chili
dry black fungus, 30g
chopped garlic
coriander
red chili oil
sesame oil
salt
white vinegar

Note: the amount of the ingredients especially the seasonings listed above can be appropriately used according to one's personal taste.

Methods:

Soak the dry black fungus in cold water for 10-15 minutes until they fully expand. Wash and clean them well, and get rid of the stems with scissors.  Clean the red and yellow peppers with water after  removing the seeds, shred them, and put into a plate.

Half fill a wok with water, bring the water to boil. Add the processed black fungus, and stir and blanch for 2-3 minutes. Then pick them out of the wok, and remove excess water through a colander. Put them into a soup bowl filled with cold water to cool for a while.

Remove the excess water through a colander again. Pour the water away, and put the black fungus back to the soup bowl. Add in chopped garlic, red and yellow pepper shreds, white vinegar, salt, red chili oil and sesame oil. Stir well with chopsticks or a spatula until mixed.

Tips: Some lightly boiled or steamed green vegetable leaves, onion leaves or fresh parsley can be added to the dish to make it more colorful and delicious.

    On Oct. 21, 2012, Mr. Harry, Ms. Ellen, Mr. Ronald & Ms. Linda from USA had a rare chance to learn to cook their favorite Chinese dishes - Black Pepper Beef, Twice Cooked Pork & Black Fungus with Mashed Garlic in the kitchen of a regular Chinese apartment in Xi'an when they participated in our family visit tour. They praised it was a great experience that they really enjoyed.

    On 10th July 2012, a group of our guests including Ms. Jenna and Mr. Owen from USA, Mr. Arturas, Ms. Ausra, Mr. Mantas and Mr. Vismantas from Lithuania, and other guests from UK and Norway joined our Chinese cooking class in a local family during their tour in Xi'an. They enjoyed the experience very much, because they not only got to know more about Chinese people’s life by this visiting, but also learnt how to prepare truly home-made Chinese dishes. Some of them learnt to cook the cold dish – Black Fungus with Mashed Garlic, and it was fun that some others were busy in taking video of the process.

    On Oct. 11, 2010, Mr. Matthew & Mrs. Sophie from France joined a family tour arranged by TravelChinaGuide and learned to cook Kung Pao Chicken, Chinese Dumplings & Black Fungus with Mashed Garlic in a local family in Xi'an.
