For sightseeing purpose, you should apply for a tourist visit visa. You can apply for the visa at the China embassy in Riyardh or send the application directly to the immigration department of Hong Kong SAR. For the detailed requirements, see the info at this page:

Non-residents of Singapore who require visas to enter Japan must obtain their visas at a Consulate or Embassy of Japan in their home countries, so I'm afraid your wife will be note able to get the via to Japan in Singapore.

yes, you can get the China visa from the Office of the Commissioner of the Ministry of PRC in Mcau SAR.
You need to prepare the fllowing documents:
1) One duly completed and signed Visa Application Form with a passport photograph attached;

2) Your passport with at least 6-month validity and at least 2 blank visa pages.
Meanwhile, you may also be asked to provide Visa Notification Form issued by Chinese authorized unit, economic proof of enough money for your China trip and so on.
For the details, you have to ask the Commissioner of the Ministry of PRC in Mcau SAR.

Which Chinese embassy told you that? Can't believable! You have to provide the required documents even if you entrust a visa/travel agent to process it for you.

No, it is not true. After your arrival, you are required to go through a medical check-up. If you are find out " having symptom of Swine Flu" (fever, cough etc), you will be put in quarantine.
