If you book a ticket for a train from West Kowloon station to Guangzhou, but arrive earlier at the station, can change to an earlier train (assuming there's seat availability).

Yes, you can endorse the ticket at the ticket center. But it requires a certain amount of service fee.

Take the HK airport express to Kowloon, walk to the West Kowloon High Speed Rail Station to take a bullet train to Shenzhen North, then take another bullet train to Fuzhou.

How will you travel back and forth? If by high speed train, Hong Kong MTR & High Speed Rail has issued the 20-ride ticket valid for 90 days and 30-day ticket with 60 rides which allow passengers to take multi-rides between Hong Kong West Kowloon Station and Shenzhen Futian, Shenzhen North Railway Station.

If you plan to travel by HK MTR and connect to Shenzhen metro after crossing the border, here is the solution: Hong Kong MTR has Monthly Pass and MTR City Saver valid for 40 days for your choice; for the city transportation in Shenzhen, Shenzhen Metro provides 3-day ticket for tourists.
